(Taste's great with this orzo recipe I have posted now)

Parmesan chicken with butter and white wine
Jasmine rice
Spinach salad with red onions, mandarin oranges, toasted walnuts, and homemade orange ginger dressing.
Parmesan chicken: (adapted slightly from this recipe)
4 boneless skinless chicken breasts
1 tablespoon dried chopped fresh parsley
1 teaspoon salt
1/2 teaspoon ground black pepper
1/2 teaspoon garlic powder
1/2 teaspoon paprika
1/2 teaspoon italian seasoning
1/2 cup grated Parmesan cheese
1/2 cup dry bread crumbs
1/4 cup butter, melted
1/2 cup dry white wine
Preheat overn to 350 degrees F (175 degrees C).
Combine seasoning, cheese, and breadcrumbs in a ziploc bag. Shake each chicken piece, one at a time, in bag until well coated.
Place chicken in baking pan and pour melted butter over each piece evenly.
Bake uncovered for 35 minutes. Remove from oven and pour wine over each piece. Cover with foil and bake an additional 15 minutes.
Yummmmm.
I also made Crash Hot Potatoes but they didn't fit on the plate :)
